What’s for dinner Thursday?

 

Can you believe it’s Thursday already? Well, every week my friend (and awesome blog designer) Joanna of This Southern Girl’s Nest hosts ‘What’s for dinner Thursday?’

This week I am featuring Taco Soup.

First you have to decide if you want ground beef, ground turkey or chicken. I went for ground turkey this time because my booty has not been fitting into my pants very well lately. So turkey it was.

You must also have these ingredients. You may not leave any of them out, or it will not be the same. You can choose to use all yellow corn or all white corn, and you can change the beans to ranch or kidney, but don’t leave out anything!

1. First thing…cook the meat and onions. Lots of onions! I like to add salt and pepper here, and since I was using turkey I added some extra cumin, but it’s not necessary.

2. Drain if needed.

 3. Drain corn before adding, then add the tomatoes, and the can of beans. Pour in two cans of water, more or less according to how soupy you like it.

4. Stir together and bring to a boil, then let simmer on low. The longer it cooks, the better it tastes, but it is a very quick and easy meal done in less than 30 minutes.

Since I was attempting to be healthy--I topped it with low-fat Mexican blend cheese, and low-fat tortilla chips.

Today I had grilled fish, and I am walking every night, too. Maybe sometime soon I will be back into shape! My husband’s 30-year reunion is coming in October, so I have to be LOOKIN’ GOOD.

Thanks for linking up tomorrow! I gotta go and get that post ready to go up. I have some of it drafted.

I am going grocery shopping tomorrow so I am definitely gonna be adding this to my menu. Because NOT only is it good for you, but it looks budget friendly as well!

Misti, that does look yummy!! I hear you on tight pants...we are on a health kick here too. Why can't we just enjoy whatever we like and still not gain weight...I know I am living in a fantasy world! lol. Thanks for sharing, oh you already look great for the reunion...

YUM! I love taco soup, expecially with the ranch packet - it adds depth but doesn't overwhelm it.
Thank you for the sweet comments, I am new to blogging, but not to DIYing. We have very similar tastes - darker, richer and handpainted :)

And now you know why I have an extra headboard and footboard. I used a bed rail to make a shelf out of. And the bricks came with the kitchen, lucked out with that one. They do make really thin veneer ones. About 1" thick.
It is so nice to meet you. (And to find someone with similar taste too!)

I know, feels like I am the only one buying brown paint in a white world. I am excited to find someone fun and creative! And you are right - I have yet to find someone with the same taste! Thank you also for the follower tip - I struggle with blogger - I am technically inept (an artist by nature), and the irony is that my husband owns an IT company. HA!

Looks Yummy! I think I would use black beans. I will have to cook this one day when hubby has an all day work day.
